Broccoli Mushroom Soup Recipe
1/2 bunch broccoli
1 tablespoon olive oil
1/2 cup fresh mushrooms
2 medium carrots, finely chopped
1/4 cup finely chopped onion
1 garlic clove,
2 cups water
2 tablespoons lemon juice
Cut broccoli in small size pieces. Peel and chop stalks.
In a large saucepan, heat oil over medium-high heat; saute mushrooms until tender, 4-6 minutes. remove from pan.
In same pan, heat oil add garlic and onion sauté for few minutes add broccoli and carrot ,cook until broccoli get soft add 2 cup water
Blend it in soup consistency return to pan. Add mushrooms; bring to a boil. Add lemon juice and black pepper.
